Oven-Baked Chicken
Ingredients:
2 lbs chicken drumsticks and thighs, skin-on, cleaned
Thoroughly clean with water, lime, and vinegar.
1 ½ teaspoons sea salt
1 ½ teaspoons pepper
2 teaspoons all-purpose seasoning (ideally, Adobo)
⅛ cup yellow mustard
⅛ cup vegetable oil
Instructions:
Preheat the Oven: Set your oven to 400°F.
Prepare the Chicken: In a large bowl, combine the chicken pieces with all dry ingredients. Drizzle with vegetable oil and mix thoroughly, ensuring each piece is evenly coated.
Bake: Arrange the seasoned chicken on a baking tray lined with parchment paper or lightly greased. Place in the preheated oven and bake for 20 minutes.
Baste and Continue Baking: After 20 minutes, carefully remove the tray from the oven. Baste the chicken with the pan drippings, turn each piece over, and return to the oven for another 20 minutes.
Broil for Crispiness: Once the chicken has baked for a total of 40 minutes, switch the oven to broil. With the chicken skin-side up, broil for an additional 5-10 minutes, keeping a close eye to prevent burning, until the skin achieves a crispy, golden-brown finish.
Serve: Remove the chicken from the oven and let it rest for a few minutes. Serve warm with your choice of sides, such as rice, mashed potatoes, or roasted vegetables.
